Assaisonner sel et poivre, r\u00e9server au frais.<\/p>\n<\/li>\n<li>\n<p align=\"LEFT\">Fumet de poisson : dans une casserole, disposer les parures de lotte la garniture aromatique taill\u00e9e finement, mouiller \u00e0 hauteur, porter \u00e0 fr\u00e9missement puis retirer du feu et laisser infuser 20 minutes- passer au chinois.<\/p>\n<\/li>\n<li>\n<p align=\"LEFT\">L\u00e9gumes : \u00e9plucher puis tailler les l\u00e9gumes les cuire dans ce fumet &#8211; r\u00e9server.<\/p>\n<\/li>\n<li>\n<p align=\"LEFT\">Sauce blanquette : R\u00e9duire le fumet de moiti\u00e9, ajouter la cr\u00e8me, r\u00e9duire d\u2019un tiers, lier au jaune d\u2019\u0153uf, ajouter le safran. Pocher doucement la lotte dans le bouillon.
